What you need to know about the rankings of Bordeaux

Not easy to find when it comes to discuss the classification of Bordeaux wines. Some are (almost) set in stone (1855 classification for the Médoc and Sauternes, Graves Classification), others the contrary were the subject of intense fighting in the legal field (Saint-Emilion, Crus Bourgeois ). Still others, simply do not exist: so, for example, the wines of Pomerol which does not have an official classification *.
When it comes to wine, the rankings should incorporate both criteria terroir but also the quality of the work in the vineyard and winery with the winemaker. Each name has distinct characteristics, both in terms of variety as soil composition. Rightly, the rankings so far have made with respect to appeals, or regions with similar characteristics.
What is their role?
The rankings are based on a detailed specification and are based on the most objective criteria possible, so they have reference value to the final consumers. The hierarchy produced some rankings has established a price range that serves as a standard during the exchanges. This does not prevent prices fluctuate depending on the quality of the vintage . Sometimes, work and investment by some areas are moving the lines of classification, and there is a market that redefines the hierarchy. Some areas ranked fifth in 1855 exchange in effect at price levels higher than those in areas classified third, or fourth, depending on the law of supply and demand.
For a ranking is not always final. Depending on the initial specifications, some of them have gone through the decades and even centuries without any modification, or almost does not come to upset the established order at the origin. This is the case the classification of 1855, amended once in 1973: the château Mouton Rothschild was then appointed to the rank of first classified. You are more Southern in nature, or rather classic? The Morgon appellation offers these vintages 2009 and 2010 - both very successful - two very different interpretations of Gamay. The opportunity to organize a friendly tasting!
Morgon is probably all the names of Beaujolais , which has a reputation for producing wines of the most "serious". The Gamay grape variety emblematic of the region, rather a jolly fellow side, the wine of friends that can be opened without asking any question. Without denying the ease of genetic gamay, the Morgon wines are often perceived as a little less casual than the other raw and equipped with enough storage capacity significantly higher. This structure inherent in most Morgon has undeniably made by a land which, although diverse, is generally quite poor and thus allows to curb the trend a bit gamay productivist of giving a little more density. This tactile sensation is very strong on wines from the climate of the Côte du Py, a sign of terroir wines neatly derived from them. Otherwise, as in most other wines of the area, the vineyards in Morgon is backed the granite hills overlooking the valley of the Saone. This relief rather marked influence significantly the maturity of the grapes as it can take three weeks of delay between the parcels near the hamlet of Saint-Joseph (about 500 m) northwest of the appellation and southern and is the only AOC beyond 200 m.
2009 - 2010: a top match
2009 is a beautiful vintage in Beaujolais Morgon in general and in particular. He gave some nice ripe grapes and grape very healthy. The wines generally have a rich fruity and dense and voluptuous. A vintage more "Southern" than Northern, relatively unusual, but absolutely delicious and reconcile with all those who associate Beaujolais too fast this region with an aggressive acidity. Ines de La Fressange President! (151st of the Hospices de Beaune)

Could one ask for a better ambassador? Icon of Parisian elegance and a symbol of French chic, Ines de La Fressange this year will be President of 151st Auction Hospices de Beaune.
Culmination of a long weekend during which the town of Beaune is the scene of a celebration dedicated to wine, the auction of the Hospices de Beaune is traditionally held the third Sunday of November. How would you rate the 2009 vintage in Burgundy?
With 2005, the largest vintage that we have experienced over the past decade. It is exceptional for red wines . At the time, 2005 was perhaps a little more traditional, a little more closed, while 2009 is on the fruit, very fond, with acidity somewhat lower than average. There is no austerity in 2009.
The wines are currently sold by iDealwine were raised in your cellar. What is the signature "Latour" in the farm?
We always strive to keep the fruit and avoid at all costs as dry wines in barrels. To better control this process, we also have our own cooperage which allows us to better control the quality of wood heaters but above all to avoid over-toasting that distort the taste of wine. We recommend short farms to maintain the charm of the fruit. 2005 probably deserved a farm a little longer, but in 2009 I think farms are ideal for short profile of vintage .
What are the characteristics of the appellation Beaune?
The wines of the appellation Beaune are generally on the fruit and extremely fond. The qualities of the 2009 vintage are particularly in tune with the usual characteristics of the wines of this area and the Cote de Beaune in general. In addition it will give wines that will be very pleasant to drink young quickly on their greediness. But their power and balance tannic alcohol certainly allow them to age harmoniously.
Maison Louis Latour
Independent family business, Maison Latour is one of the most respected traders and breeders of Burgundy. Known worldwide for the quality of its red and white wines, the company has built a reputation of tradition and innovation.
The Latour wine since the 17th century, and are now at the head of an area of 50 hectares, unique, being the largest area of great wines in the Côte d'Or with a total of 28, 63 hectares. Recipe of the Week: Cake with prunes, smoked duck breast and walnuts

This recipe will make a beautiful entrance refined. You can also serve on a board in front of your film on Sunday evening. Serve this cake with a glass of pinot (Beaune, Gevrey-Chambertin) or a Sancerre (white and red will do) and possibly a small salad. Good evening!

Ingredients for 6 people:
Basis of the cake:
1 pot of natural yoghurt
2 yogurt flour
3 eggs
4 tablespoons of hazelnut oil
Half a packet of yeast
Filling:
150 g of smoked duck breast slices
10 prunes
75 g of nuts
Salt and pepper
Preheat oven to 180 ° C.
Preparation of the recipe
Pit plums and cut them into small pieces.
After removing the fat from the duck breasts, cut into strips.
Break the eggs into a large bowl and beat vigorously with the yogurt and hazelnut oil. Add the flour and baking powder into rain. Add salt and pepper and mix gently until the mixture smooth and homogeneous (possibly grind with milk or flour).
Add the pieces of prunes, sliced duck breast and chopped walnuts and mix again.
Pour the batter into a cake tin and bake in hot oven (220 ° C) for 5 minutes, then lower temperature to 160 ° C and bake the cake another 35 minutes or so.

La belle enchère : difficiles cotations pour les Bordeaux 2008

Mis en vente au printemps 2009, quelques mois après le début de la crise financière, les Bordeaux 2008 en primeur ont représenté une excellente affaire, surtout pour ceux qui avaient pu les acquérir dès les premières tranches lors de la campagne. Et en tout état de cause avant que Robert Parker ne les gratifie de notes excellentes, voire exceptionnelles. Aujourd'hui, ces vins ont été livrés à leurs acquéreurs, et certains arrivent sur le marché des enchères. Analysis.
Les Bordeaux 2008 ? Probablement LA bonne affaire de la décennie pour les adeptes de l'achat en primeurs. La campagne s'est en effet déroulée dans un contexte économique difficile : les acheteurs professionnels peinaient à écouler leurs stocks de Bordeaux 2006 et 2007. Ils ont donc montré peu d'appétit pour les vins de ce millésime . Les niveaux de prix sont ainsi restés stables, voire, pour certains, en baisse par rapport à ceux du millésime 2007 .
Depuis, la situation a considérablement évolué. La demande asiatique s'est développée de manière fulgurante. Et le prix des millésimes 2009 et 2010 (tous deux jugés mythiques), a lui aussi explosé. Faut-il pour autant considérer que les Bordeaux 2008 méritent d'être revendus à des niveaux de prix proches de ceux des deux millésimes suivants ?
Certes, le millésime 2008 bénéficie, aux yeux du marché asiatique, d'un avantage certain : comme toutes les années en « 8 », il est recherché pour la symbolique du chiffre 8, porte-bonheur en Chine. Il a donc bénéficié d'un engouement fort de la part des amateurs asiatiques. Pour autant, les spécialistes s'accordent à dire que les qualités intrinsèques du millésime ne sont pas en mesure de rivaliser avec celles des grandes années qui l'ont suivi.
Par ailleurs, la demande asiatique semble s'être stabilisée. C'est sans doute provisoire en raison de la taille du marché chinois et de l'appétit manifesté à l'égard de nos grands crus, mais pour l'instant il semblerait que la demande asiatique marque une pause. L'afflux de grands crus vers Hong-Kong depuis maintenant plus de deux ans a contribué à engorger le circuit de distribution des vins. De fait, aujourd'hui dans les ventes, on observe une stabilisation, voire même un repli des cours, tous millésimes confondus, sur les valeurs les plus spéculatives ( Château Lafite Rothschild et son second vin , Carruades de Lafite ).
Avec des 2008 acquis à un prix attractif, les amateurs ne doivent donc pas se montrer trop gourmands à la revente, la mise de départ ne pourra être quadruplée ! Dans les ventes aux enchères de ces dernières semaines, certains lots sont restés invendus. Signe que le curseur avait été placé un peu haut par des vendeurs âpres au gain… Les vins des châteaux Lafite Rothschild, Pichon Longueville Baron, Pontet Canet ou Léoville Barton se sont en effet récemment retrouvés dans cette situation.
