Georges Descombes est classiquement issu d’une famille de vignerons, over several generations. Yet he was rather attracted by mechanical, beautiful even mechanical, and this is still true today. But he was the only member of his family to kindly take care of the vineyards : après une école de viticulture, he signed his first harvest in 1987, on plots of Brouilly inherited from her grandmother. Even in its infancy, Georges Descombes n’a jamais été un vigneron très versé dans le traitement chimique et cela fait plus de dix ans qu’il travaille ses vignes en bio, with rare exceptions : plots on very steep, impossible to plow, uses of the herbicide. Les vinifications s’effectuent majoritairement en cuves béton mais aussi dans des cuves inox et époxy. Le vin est ensuite élevé entre 8 and 9 months in barrels for wine Old Vines, in barrels aged two to ten years and raw concrete tanks for other vintages. The vintage Old Vines was sold a year later, in one year lag compared to most producers Morgon. " It is a commitment, for natural wines, it moves, and I prefer to sell them when they are stabilized.
